    “Mark, a friend from work, submitted this in a work chili cook-off, however he gave it the title White Potato Chili…everyone loved it!!! This dish can also heat in a crockpot…”

    Ingredients

  • 2 (6 1/2 ounce) cans minced clams
  • 2cupspotatoes, chopped
  • 1cuponion, chopped
  • 1cupcelery, chopped
  • 1 1/2 teaspoonssalt
  • 1dashpepper
  • 3/4 cupbutter
  • 3/4 cupflour
  • 1quarthalf-and-half
  • Directions

  • Put veggies in pot.
  • Drain clam juice into veggie pot.
  • Add water to cover.
  • Boil until tender.
  • Make white sauce with remaining ingredients.
  • Melt butter.
  • Stir in flour, salt, and pepper.
  • Cook for 3 or 4 minutes.
  • Add half and half, stirring continuously until thick.
  • Add clams and veggies to white sauce.
  • Heat through.

I also added old bay seasoning.   • “I’ve never made clam chowder before, just bought the canned stuff.This will be my recipe for Clam Chowder.I studied a lot of recipes before making this because I wanted to use what I had in the house.I really, really do like this.After the vege’s sauteed & the fire was turned off under that pot I added some chopped green onions.Seems like here in Louisiana we always add chopped green onions to just about everything at the end of cooking.Anyway, after everything was put together I added 1 cup of chicken broth.To me It needed just a little something & not just salt.I had one 10 oz. & one 6 oz. can of clams in the house so that is what I used.This was easy to make but did take a little time because of having to be so careful with the white sauce.I also used fat free half & half.Thanks so much!”
