Meatball Soup

    “A yummy change from beef stew on a cold winter’s night. Serve with warm bread or bread sticks.”

    Ingredients

  • 1beaten egg
  • 1/2 cupsoft breadcrumbs
  • 2teaspoons parmesan cheese or 2teaspoonsromano cheese
  • 1teaspoonsnipped parsley
  • 1teaspoononion, finely chopped
  • 1/4 teaspoongarlic salt
  • 1/8 teaspoonground pepper
  • 1/2 lbground beef
  • 1 (15ounce) cans garbanzo beans, drained and rinsed
  • 1 (14ounce) cans beef broth
  • 1 (14ounce) cans Italian-style tomatoes, undrained
  • 1 1/2 cupswater
  • 1cupsliced fresh mushrooms
  • 1teaspooncrushed Italian spices
  • 1/4 cuptiny bow tie pasta
  • 3cupsfresh spinach, torn
  • Directions

  • Combine egg, bread crumbs, cheese, parsley, onion, garlic salt and pepper in a medium bowl.
  • Add ground beef and mix well.
  • Form about 36 meat balls.
  • Cook meatballs in a large skillet over med heat until no longer pink, turning occasionally to brown evenly.
  • Drain fat from skillet or remove meat from skillet and set aside.
  • Combine beans, beef broth, tomatoes, water, mushrooms and Italian seasonings in a large sauce pan.
  • Bring to boil.
  • Add pasta bows and then return to boil.
  • Cover and reduce heat to simmer for 10 to 12 minutes or until pasta is tender.
  • Stir in spinach and meatballs.
  • Cook for 1 or 2 minutes more or just until spinach is wilted.

  • “We loved this soup! The first time that I made it, I made the meatballs according to the recipe. They were good, but I would prefer the ease of buying the frozen mini-meatballs and using them instead. You may also want to consider adding more liquid and also, crushing the tomatoes up a bit. We froze the soup, which means two things. First, make sure that your noodles are al dente during the initial batch. Also, you may want to consider adding the fresh spinach when you warm up the soup so that it doesn’t get too wilted and disgusting instead of duing the initial batch. All in all, great soup. Pretty healthy and very tastey.”

  • “Well, it’s not a cold winter night here but we enjoyed this soup all the same. Husband has a cold so I thought he’d like something warming and this went down well. I used my own frozen pre-made meatballs and a little bit of cabbage I had around the house instead of spinach. If you are going to use cabbage, make sure you slice it extra thin as it doesn’t cook down as much as spinach does. Great soup with lots of flavourand I love the fact it doesn’t take long to make and uses just basic ingredients. Thanks Karen!”
