Ingredients
2tablespoonscorn oil
1 1/4 cupsonions, chopped
2clovesgarlic, minced
2tablespoonschili powder
1/4 teaspoonbasil leaves
1/4 teaspoonoregano
1/4 teaspooncumin, ground
2cupszucchini, diced
1cupcarrot, diced
2lbstomatoes, diced
1 (20ounce) cans chickpeas, drained
1 (16ounce) cans kidney beans, undrained
Directions
In 5-quart saucepan heat oi l.
Add onion, garlic, chili powder, basil leaves,oregano and cumin.
Cook, stirring, 5 minutes or until onion is tender.
Addzucchini and carrots.
Cook, stirring, 1 to 2 minutes.
Stir in remainingingredients.
Bring to boil.
Reduce heat; simmer 30 to 35 minutes.
