Meatless Chili III

  • Ingredients

  • 2tablespoonscorn oil
  • 1 1/4 cupsonions, chopped
  • 2clovesgarlic, minced
  • 2tablespoonschili powder
  • 1/4 teaspoonbasil leaves
  • 1/4 teaspoonoregano
  • 1/4 teaspooncumin, ground
  • 2cupszucchini, diced
  • 1cupcarrot, diced
  • 2lbstomatoes, diced
  • 1 (20ounce) cans chickpeas, drained
  • 1 (16ounce) cans kidney beans, undrained
  • Directions

  • In 5-quart saucepan heat oi l.
  • Add onion, garlic, chili powder, basil leaves,oregano and cumin.
  • Cook, stirring, 5 minutes or until onion is tender.
  • Addzucchini and carrots.
  • Cook, stirring, 1 to 2 minutes.
  • Stir in remainingingredients.
  • Bring to boil.
  • Reduce heat; simmer 30 to 35 minutes.
