  • About This Recipe

“This recipe is the best! The kids will love it and Dad too! I make in the morning before I leave for work, so when I come in from work, I just pop in the oven.”

    Ingredients

  • 5 -6boneless skinless chicken breasts
  • 1/2-1cupmargarine
  • salt & pepper
  • 3 -3 1/2 cupscheese crackers, crushed
  • Directions

  • Dip chicken in melted margarine.
  • Salt and pepper.
  • Then coat with crushed cheese crackers.
  • Place in baking dish and cover tightly with foil.
  • Bake in 300° oven for 1 or 1-1/4 hours.
  • DO NOT uncover until cooking time is over.
  • This is great to make ahead and refrigerate.
  • Then all you have to do is put in oven before dinner.
  • You can use whole chicken, cut up if you prefer.
  • Reviews

  • “This was interesting.Usually baked chicken with crumbs on it is supposed to be crunchy. These, cooked covered, are not crunchy but what a neat texture and taste for a change.Overall I prefer a crunchy texture but for a change of pace these were really good.Thank you Vicki!!”

  • “My husband absolutely loved this one. It’s easy enough for him to make and healthy enough that I’ll let him! The chicken comes out really moist. There is nothing worse than dry chicken.”

  • “Different. We liked the taste. I used cheese ritz crakers gave ita great flavor. “

  • “I have to agree with Tebo, this is interesting, but personally I did not care for it at all. It came out very bland, but 3 out of 5 who ate it really liked it, so I am basing my review on this.I used half cup margarine (I normally only use butter, but I wanted to follow the recipe) and only needed about 2 cups of crushed crackers, so the rest were wasted.Overall, thanks for a unique, easy recipe that most of the family liked…3 of them would like me to make it again, so maybe I will half the recipe for them :)”

  • “This recipe is great!!! My kids are quite picky and weren’t thrilled with the thought of chicken again, but they really liked this.My husband even thought he might be able to make it.I made it up on Sunday night and then had him put it in the oven for supper on Monday while I was at work.I left out the salt because the crackers are quite salty and it was wonderful..”
