    “Have a coffee with these chocolate/coffee-flavoured muffins!”

    Ingredients

  • 2teaspoonsinstant coffee
  • 1tablespoonhot tap water
  • 1egg
  • 1/4 cupcanola oil
  • 1cupmilk
  • 1teaspoonvanilla extract
  • 1 1/2 cupsall-purpose flour
  • 1/2 cupwhite sugar
  • 2tablespoonscocoa
  • 1teaspoonbaking powder
  • 1/2 teaspoonbaking soda
  • 1/4 teaspoonsalt
  • 1/2 cupchopped almonds(optional)
  • Directions

  • Preheat oven to 400F; in a 12-cup muffin pan, place paper liners in 10 cups and set aside.
  • In a small bowl, dissolve instant coffee in hot water.
  • In a large bowl, crack egg and whisk; stir in oil, milk, vanilla, and coffee mixture; combine well.
  • In an another small bowl, combine dry ingredients.
  • Gently fold dry ingredients into coffee mixture, just until mixed; do not overbeat.
  • Spoon batter into the 10 paper liners and decorate the top of each muffin with a few chopped almonds, if desired.
  • In the two unused muffin pans, place some water so they won’t burn.
  • Place in preheated oven and bake for 25 minutes.
  • Remove from pan and cool on rack.

  • “I made them in mini muffin trays- batter was enough to make 38 mini muffins.I used 3 tsp of coffee powder and 3 tbsp of cocoa.I also dropped a few choc chips into each cup before putting it into the oven to bake. Like Lesley, my Tefal electric oven needed less than 25mins to bake.The first batch following the recipe time given came out with a crusty top and rather dry and “hollowish” muffins but following batches with time re-adjusted came out much better. thanks for the recipe. “

  • “These were really good! They are just perfect to bring to work for a late morning snack. My first batch seemed to turn a little dry and tough, but I think it’s because I over mixed the batter, so be careful. Also, I only had to bake them in my oven for just under 20 minutes.”
