Mums ‘scotch’ Pancakes

    “My Mums famous recipe!”

    Ingredients

  • 2cupsflour
  • 4teaspoonsbaking powder
  • 3eggs
  • 3tablespoonssugar
  • 1pinchsalt
  • 2tablespoonsoil( or melted butter)
  • 1 1/2-2cupsmilk( to mix to a smooth consistency)
  • Directions

  • Mix dry ingredients.
  • Add beaten eggs and butter or oil.
  • Add the milk.
  • Put on spoonfuls onto greased hot griddle or frying pan.
  • Turn when’bubbles’ appear.
  • Remove from pan and place on wire racks.

I added mashed banana, a bit of vanilla extract and instead of white sugar I used brown sugar & 3/4 c *egg beaters* in place of the eggs in the pancake batter. I also added some pecan pieces and made a homemade warm syrup to top with. Thank you for sharing!”

I scaled the recipe back to 6.5 which may seem like an odd number but there were only 2 of us eating and the ingredients list was manageable at that (no fractions of eggs or anything); it made about 18 dollar sized pancakes and we only had 3 leftover. Easy to flip & they turned out light and fluffy. We ate most of them just spread with butter and had syrup on a few. Flavor was pretty good, but I think I’d add just a little vanilla & cinnamon next time. Thanks for posting.BTW – The directions should probably specify to melt butter in the pan or spray with non-stick spray or something so the pancakes don’t stick. Someone might not know if they’re making pancakes for the first time.”
