Never-The-Same-Twice Meatloaf

    “Every time you make this recipe, use a different chutney and/or a different barbecue sauce. The possibilities are almost endless!”

    Ingredients

  • 1/2 lblean ground beef
  • 1/2 lb ground pork or 1/2 lbground veal
  • 1onion, chopped
  • salt and pepper, to taste
  • 1jarhomemade or prepared chutney
  • 2sliceshearty white bread
  • 1/2 cuphomemade or prepared barbecue sauce
  • Directions

  • Soak slices of bread in chutney until soft and combine with remaining ingredients.
  • Mix well, and place in a meatloaf pan.
  • Bake at 350°F for 45 minutes.
  • Remove from oven and, with the back of a teaspoon, make a shallow ôtrenchö, lengthwise, on top of the meatloaf, and fill the ‘trench’ with barbecue sauce.
  • Return to the oven and bake for another 15 minutes.

  • “Miller this meatloaf is exceptional, great taste with a nice little bite. I had a pound of each meat in so I doubled the recipe, so I could freeze some. I used quite a hot chutney, “Nana’s mango/date chutney” from India, it was a wonderful choice! Didn’t have any bbq sauce around so I used Chilli sauce, it didn’t detract from the chutney taste, which was good. DH commented that this was better than a 5*, we both loved it, it was a great change from the usual old boring meatloaf! It will be on our menu again and again, thanks for sharing it!
