    “Great for a luncheon with a green salad and crusty rolls. Easy and economical.”

    Ingredients

  • 1/2 cupchopped onion
  • 1tablespoonbutter
  • 2tablespoonsflour
  • 1teaspoonsalt
  • black pepper
  • 1cupmilk
  • 1teaspoonDijon mustard
  • 1cupcottage cheese
  • 1/2 cupcheddar cheese, grated
  • 2tablespoonslemon juice
  • 8ouncesnoodles, cooked
  • 2tablespoonschopped fresh parsley( for garnish)
  • Directions

  • Saute onion in butter (use olive oil if you prefer) until soft.
  • Stir in flour, salt and pepper until smooth.
  • Slowly stir in milk and mustard.
  • Cook until thickened.
  • Stir in cheeses, lemon juice and add cooked noodles.
  • Pour into a greased casserole dish.
  • Bake at 350°F for 40-45 minutes.
  • Sprinkle with chopped parsley and serve.
