Oatmeal Waffles or Pancakes

    “These waffles are great for someone who needs more fiber or who is trying to lower their cholesterol. They’re tasty, too.”

    Ingredients

  • 2cupsquick oats
  • 1/2 cupflour
  • 1teaspoonsalt
  • 1 1/2 cupswater
  • 1tablespoonbaking powder
  • 1beaten egg
  • 1tablespoonmolasses
  • 2tablespoonscorn oil
  • Directions

  • Mix well together.
  • There should be no lumps.
  • Bake in a waffle iron, or like regular pancakes.
  • Variation: add 1/2 cup finely chopped apple and 1/2 teaspoon cinnamon.

I made them for my daughter’s birthday breakfast w/ out the cinn. & apple, but topped them with goat cheese and stawberries. They were delicious. I have since made them with the apples and cinnamon, and they were good, but a little wetter texture. The best part of all though is that this batter is thick enough that it doesn’t run all over my waffle maker, which makes clean up a breeze! Thanks!** I use old fashioned rolled oats, and give them a whirl in the food processor until they are in fine bits, almost a coarse flour.”

  • “Tasty!I used 5 whole grains hot cereal blend and whirled it into small bits in the blender.Soaked the 5 grain ground mixture in the water to soften it before adding additional ingredients.Needed to add more water to finished product before baking as it was too thick.Probably would have been the right consistency if I had used quick cooking oats as the recipe called for.Didn’t have molasses so I used Agave for sweetener.Made 8 classic waffles in my smallish round Cuisinart waffle iron. Delicious with pear butter topping and made a great PB sandwich for 2 YO granddaughter.Nice nutty flavor – no syrup needed to enjoy these waffles.”

I made these in the blender, first grinding the oatmeal, adding the remaining dry ingredients (including cinnamon) and then the wet (used almond milk instead of water) with about half of a large Granny Smith apple. I served these with some thinly sliced microwaved apples and cinnamon syrup. SO yummy!”

I folded in a chopped apricot and a handful or raspberries and the flavor was great. I made these as pancakes cause I was lazy, but next time I will make myself do the waffles.”

  • “I loved this recipe!! I always thought you needed milk, not water, for waffles-but it worked out fine! I cut the recipe by a quarter & used 1/2 cup rolled oats (that made one big waffle-perfect for a one person meal), sugar free syrup for the molasses, applesauce for the oil, no salt & added 1 tsp cinnamon & 1/4 tsp vanilla. I also only used 1/2 tsp baking powder-which worked fine. I used my immersion blender to make it as smooth as possible-it’s probably not as great as a food processor but it does the job well enough for me! I love this smeared with natural peanut butter, sliced bananas & sugar free syrup. Delicious!!”

  • “I was hoping for better with these but that’s ok, they were worth trying. I modified it quite a bit though- I only use rolled oats, so I put all the dry stuff in the food processor, used milk instead of water, and canola oil instead of corn. Not bad.”
