“My favorite way to use okra, and besides…it is good. I usually make this in the summer when okra is plentiful, but I have also used frozen okra successfully.NOTE:I should have put this notice here before, but just didn’t think!Okra should be chopped by hand. The food processor makes it way to slimey to work with.”

“Excellent!I realized half way through that I didn’t have cornmeal so I used premade corn bread mix which has sugar in it.They were a bit on the sweet side but otherwise just delicious.I can’t wait to make them again!Oh, and mine were perfectly moist and needed no accompaniment.Maybe it was the mix?”
“These were great! Easier than fried okra but with similar results… I used a few garlic cloves instead of onion, and added a bit of cayenne pepper, and I thought these were really satisfying. I thought they were nice and moist, although I agree with adventurousbeginner’s suggestion: these would be awesome with a remoulade.”

“made this recipe with frozen okra. Added 1/4 cup flour with corn meal and 3/4 cup cornmeal. Added garlic(1/4 tsp)Also baked them at 350 degrees in the oven on a greased baking tray for 1.5 hr(until they were brown being careful not to burn them). Used olive oil cooking spray .These turned out really nice…had them with some hot sauce and the kids had with ketchup. Thanks for the recipe”
“We got these frozen okra that has been in the ref for quite some time so I tried it with this recipe last night.I skipped the flour since I had the corn meal mix that had flour in its ingredients already and skipped the water too.I made sure that I had thinner patties by flattening them once they hit the pan.And they were awesome! My DH whom I gave one patty (actually one patty each) went back to get two more!Thanks!”
“Good. I made this gluten and corn free by using double the amount of brown rice flour for the flour and not adding cornmeal (which Im sure is tasty). I had to leave out the pepper because I didn’t have any that was ground. I added a big clove of minced garlic to the batter. I fried these in a canola olive oil mix. I can see these being made with zucchini maybe. I served them with taziki (a Greek sour cream, garlic, cucumber dip) They tasted good together. I dont know if I will make this again.”

“Wow! I am from Texas, fried okra is everywhere. I cannot figure out why I have never seen or heard of these, they are fantastic! I can’t wait to make these for friends and family, gosh they are really good. I did add 1 teaspoon or so minced garlic and about 2 tablespoons minced jalepeno pepper (no seeds), this is a definate keeper!!! Another great way to use up the bountyful okra harvests here in the south!”
“Geez, this is one of those wonderful recipes that come along rarely and you scratch your head and say, “Why didn’t I think of that?”!! I’ve always been a fried okra purist and never thought to look for variations like this. My loss! I wasn’t sure I would like these with onion, but I love onions and they taste great. Used vegetable oil for frying. Thanks so much for a recipe that gives you the same great taste as regular fried okra without the mess! We loved it!!”
“These were awesome!! I added garlic and chili powder. Next time I’m gonna add hot sauce to okra mixture cuz we like it spicy! I used frozen okra, defrosted, chopped up on waxed paper then proceeded with the instructions. When they were in the oil, I flattened them with the spatula to make the patty shape. Will make again and again!! Thanks.”

“This is GOOD!I’ve never cooked okra before.Our neighbor grows it and gave me a huge bag.I had to do something with it, and this recipie has such good reviews, I had to try it.More okra on the table, for sure.I minced about half and just gave up and thinly sliced the other half.I also added some garlic.An outstanding recipie.”
“Very tasty!I used a box of frozen okra, about 10 oz., but didn’t change any other measurements, so there was proportionally more “fritter” to mine.I’m trying to get more fiber into DH; he liked these, but he is funny about “new” veggies.I thought they were great, and have been happily nibbling on the leftovers straight from the fridge!Thanks, Miss Annie!”
