    “My mom’s recipe. I’ve made it for years. Have tried a few others, but always come back to this one. The cooking time is for the potatoes.”

    Ingredients

  • 6largepotatoes( cooked,peeled and diced)
  • 5hardboiled egg, dice 4 of them
  • 1cupdiced celery
  • 1/2 cupchopped onion
  • 3tablespoonssweet relish
  • 1 1/2 cupsmayonnaise
  • 3tablespoonssugar
  • 2tablespoonscider vinegar
  • 2tablespoonsmilk
  • 1tablespooncelery seed
  • 1/2 teaspoongarlic salt
  • paprika
  • Directions

  • In large bowl, mix potatoes and the 4 diced eggs.
  • Add celery, onion,and relish.
  • In small bowl mix mayo, sugar, vinegar, milk, celery seed and garlic salt.
  • Slice remaining egg over potato salad and sprinkle with paprika.

I did let the flavors mingle overnight and tried it, and decided I couldn’t live without the pickles and added them. It was the crunch and the saltiness my taste buds were looking for. Quick tip: I add a tablespoon of vinegar to the potato cooking water which helps them retain their texture rather than becoming mushy and mashed when you mix all the ingredients.”
