Our Lasagna

    “My wife and I came up with this recipe together on my most recent birthday. I came up with the recipe foundation, but the adjustments she made as she cooked are definitely the key to making this the best I’ve ever had. It makes me look forward to birthdays again.”

    Ingredients

  • 1lb ground pork or 1lbground sausage
  • 1lbground beef
  • 12ouncescanned tomato sauce
  • 1 (28ounce) cans crushed tomatoes
  • 2tablespoons fresh parsley or 2tablespoonsdried parsley, chopped
  • 2garlic cloves, minced
  • 1/2 teaspoondried oregano
  • 1/2 cupminced onion
  • 1pinchsugar
  • 2teaspoonsdried basil
  • 1/2 teaspoonsalt
  • 1/2 lbsmall curd cottage cheese
  • 1/2 lbricotta cheese
  • 3eggs
  • 1cupgrated parmesan cheese
  • 1/2 teaspoonsalt
  • 1/4 teaspoonground black pepper
  • 1 (16ounce) packages dry lasagna noodles
  • 1lbmozzarella cheese
  • Directions

  • Preheat oven to 375°F.
  • Brown pork OR sausage and beef in a dutch oven or similar large, deep skillet.
  • Once meat is browned, add tomato sauce, crushed tomatoes, and 1 tablespoon parsley.
  • Add garlic, oregano, onion, sugar, basil and salt.
  • Reduce heat to medium-low and let sauce simmer for 30 minutes.
  • Give it a good stir every 5 minutes or so.
  • In a large bowl, combine cottage cheese, ricotta cheese, eggs, Parmesan cheese, 1 tbsp parsley, salt and pepper.
  • Cover the bottom of a 9×13 inch baking dish with a thin layer of sauce followed by 1 or 2 layers of uncooked lasagna noodles; Assemble the remainder in the following sequence: cheese-egg mixture, sauce, mozzarella cheese (sliced or shredded), noodles; repeat layers ending with a layer of noodles covered with a thin layer of sauce and some shredded mozzarella.
  • Cover with aluminum foil and bake in preheated oven for 30-40 minutes .
  • Remove foil, cover top with more mozzarella and grated parmesan.
  • Bake for another 5-10 minutes .
  • Remove from oven and let stand for 10 minutes before cutting.
  • NOTE: When assembling the lasagna, we use medium- thick slices of mozzarella rather than shredded.
  • Either works great, the sliced cheese just seems to add a little extra cheesiness.
  • We use shredded for the mozzarella topping that is applied at the end.

The added egg gave the dish a creamy tasty cheese layer, and I used slices of mozzarella for the layers but grated for on top, I also used fresh lasagne instead of dried.Delicious!”

  • “I’ve been looking for the perfect lasagna and this is it!It’s the only recipe I’ll use from now on.I love that it is thick and hearty!The only changes I make is that I use 2 tsp oregano, since I like a stronger oregano flavor and I only use 2 eggs since I don’t think it really needs 3.Sometimes I’ll only use cottage cheese instead of a mix, but I like the mix of ricotta and cottage better.It tastes great either way though.I’ve made this several times now and it’s always delicious!Thanks for posting this!”

  • “I give this 3 stars only because the meat sauce is to die for and I would use it again if only for spaghetti dinners. Otherwise my rating would be a lot lower. I prepared this exactly as directed except my pan would not hold that many layers so I did only 2 of noodles, doubled on the bottom and then 1 more layer. But the sauce was not runny at all and that concerned me because the noodles were not precooked either. I had reason to be concerned as it turned out. The noodles were still quite hard after cooking and sitting for the prescribed times. Tomorrow I will add more juices to the pan and bake again. Hopefully the noodles will soften up some because otherwise, this was a very tasty lasagne possibility but will mostly be tossed out. Disappointed with the noodle direction. Next time I would suggest cooked noodles or the recipe should indicate that it is the noodles specifically sold as pre-boiling not required.”
