Party Ryes

    “Quick and easy. Great for party appetizers or snacks.”

    Ingredients

  • 2cucumbers, peeled and sliced into rounds
  • 1 (1ounce) envelope Good Seasons Italian dressing
  • 1loaf miniature party rye rounds (can be found usually in deli section of supermarket) or 1loafpumpernickel rounds( can be found usually in deli section of supermarket)
  • cream cheese
  • Directions

  • Spread cream cheese onto bread slices (don’t skimp but don’t overdue it).
  • Place cucumber round on top of spread.
  • Add a pinch of dressing mix to the top of cucumber and sprinkle.

I would maybe try a flavored cream cheese in addition to sprinkling with the Italian dressing–or perhaps mixing the dressing with the cream cheese, and then sprinkling with some other colorful herb. I used English cucumbers and left the peel on—I thought it added some nice color and contrast. My party ryes were square, not round, and I am too lazy to cut them into rounds.:)Actually, I think the square bread/round cucumber combo makes a nice presention. Thanks for posting the recipe–great one to have around for impromptu summer parties and unexpected guests.”

  • “I have to give 5 stars because they were a HUGE hit at my Boxing Day Party.They were a bit fiddly to put together.I used a long baguette that I had sliced at the bakery because I couldn’t find the party rye rounds.I also mixed the dressing with the cream cheese. Also, my friend tried making this and used light cream cheese and she said it didn’t turn out nearly as well.”

I used a soy cream cheese substitute, and instead of adding the dressing to the top of the cuke, I whipped it into the cheese. No one could tell it was non-dairy. Lots of compliments.:)”

Instead of Rye bread rounds I used “RainCoast Cranberry/HazelnutCrisps” topped with Garden fresh cream cheese Then a slice of cucumber with a little touch of parsley on top. Although I changedthe recipe a bit I didn’t think that it warranted a new recipe. They were devoured- Thanks, yours was just the base recipe that I needed”

  • “I have made these for years and they are always a hit.Light, delicious, and actually good for you!The only thing I do differently is to mix the envelope of dressing mix (or a bit less, to taste) with the cream cheese until smooth, instead of sprinkling it on top. I also use English cukes so I won’t need to peel. Just score with a fork, leaving an attractive design when sliced.”
