    “Very easy pasta dish. I use thin spaghetti in this.”

    Ingredients

  • 1/2 lbsliced bacon, diced
  • 2cupschopped onions
  • 2tablespoonsminced garlic
  • 1mediumgreen pepper, julienned
  • 1mediumred pepper, julienned
  • 1jalapeno pepper, seeded and minced
  • 1 (14ounce) cans stewed tomatoes
  • 12ouncespasta, cooked and drained
  • Directions

  • Cook bacon in lg skillet until crisp.
  • Add onions and garlic, saute 1 minute.
  • Add peppers, cook and stir for 3 minutes.
  • Add tomatoes, heat through.
  • Serve over pasta.

  • “I thought this was a very yummy pasta dish.I only used less than half of the bacon grease and added olive oil to make up for the rest.We did leave out the jalapeno pepper, only because we didn’t have any on hand.Otherwise this comes together pretty easy.Next time I think I will use that precooked bacon and just use olive oil entirely….less mess and a little bit healthier!Thanks for this recipe, made it for pasta/potatoe event in the photo forum.”
