“I used mild Rotel and cut back on the chili powder.I also added some cubed Velveeta after cooking, making this a very cheesy Mexican rice.This was easy and quick, and a welcome addition to refried beans and tortillas.With my changes the rice wasn’t spicy enough, so next time I’m using the full teaspoon of chili powder.”
“We enjoyed this very much.We didn’t find it overly spicy at all, though, admittedly, we like spicy foods.I didn’t have any Ro-tel tomatoes so I used 3/4 can of diced tomatoes and about 1/2 tsp of red pepper flakes as a substitute.I also added about 1/2 cup of corn .Thanks for a great recipe.”

“I really liked this! I didn’t have celery, but it still came out okay. I liked the fact the recipe didn’t use a lot of butter. I’ve never added sugar and worcestershire sauce before, but both really added to the flavor. Works with brown rice, but you may have to add a little more liquid and cook twice as long as directed. This will be a go to recipe for me. Thanks!”

“Paula…this is outstanding.I used Recipe #24476 for the rice, using 2 cups of beef broth (the liquid amount needed for that rice recipe), skipped the onion and used celery flakes for speeds sake.I also added a packet of sazon goya.Otherwise I followed your recipe exactly and boy was it fabulous.I served it on burritos with Recipe #191896.It worked together perfectly.Spicy and delicious!THANKS, this will be my go to Mexican rice recipe everytime.”

“This was very good rice.I’ve always wanted to make my own mexican rice from scratch rather than buying the packaged kind.I was very happy with how this turned out, used regular Rotel and still too spicy for the kids to eat, but I loved it!Didn’t have the worcestershire sauce so just didn’t put it in, will try it next time though!”

“Very very good rice recipe! I love rice and always look for different ways to make it. I was making mexican food tonight so I found this recipe. I liked that it was very easy and had not too many ingredients and also was adaptable for a low fat diet. I substituted cooking spray for the butter, stewed tomatoes for the rotel, fat free chicken broth for the water and added 1/2 teaspoon oregano, and a little more salt. It’s delicious, low fat and because it’s so quick and easy I will be making this often. Thanks Paula!”
