Pear Bread Delight

  • Ingredients

  • 3cupsall-purpose flour
  • 1teaspoonbaking soda
  • 1/4 teaspoonbaking powder
  • 1teaspoonsalt
  • 1tablespooncinnamon
  • 3/4 cupvegetable oil
  • 3eggs, slightly beaten
  • 2cupssugar
  • 2cupspears, peeled and grated
  • 1cupnuts, chopped( or less)
  • 2teaspoonsvanilla
  • Directions

  • Combine flour, soda, baking powder, salt and cinnamon in a large bowl.
  • Make a well in center of mixture. Combine oil, eggs, sugar, pears, nuts and vanilla.
  • Add to dry ingredients, st irring just until moistened.
  • Spoon mixture into 2 greased 8 1/2 x 4 1/2 x 3 inch loaf pans.
  • Bake at 325 degrees for 1 hour and 10 minutes or until done. Cool 10 minutes before removing from pans.
  • Yields: 2 loaves.
  • Good with coffee.

  • “Great bread.The pear taste is pretty subtle but I liked the spiciness.I added a cup of shredded zucchini to mine and 1/2 tsp of nutmeg.I also used 1/2 cup of oil and 1/2 cup of applesauce and it turned out extremely moist.I didn’t think it was too sweet at all and I used 1 cup brown sugar and 1 cup white sugar.Instead of grating the pears I just chopped them up into small pieces.The bread turned out great and I really liked the addition of zucchini.”
