  • 4jalapeno peppers, finely chopped
  • 2 (15ounce) cans black beans, drained and rinsed
  • 2cups fresh corn or 2cupsfrozen corn
  • 1mediumsweet red pepper, diced
  • 1cupchopped tomato
  • 1mediumred onion, chopped
  • 1/3 cuplime juice
  • 2tablespoonsminced fresh cilantro or 2tablespoonsparsley
  • 1tablespoonminced garlic
  • salt
  • Directions

  • Combine all ingredients in a bowl.
  • Stir and mix well.
  • Cover and chill.
