Pork Adobo

  • Ingredients

  • 2lbslean pork
  • 3tablespoonsvinegar
  • 1 1/2 teaspoonssalt
  • 1/2 cupwater
  • 2clovesgarlic
  • 1smallonion
  • 3tablespoonscooking oil
  • to tastepeppercorn
  • 1/4 cuptomato, chopped
  • Directions

  • Wash the meat and cut it into pieces you desire. Put the meat, salt, vinegar,crushed garlic and peppercorn together and allow it to cook for 30 minutes.
  • Inyour skillet, on medium heat, put cooking oil and crushed garlic. When garlic isbrown, add chopped onions and tomatoes.
  • When tomatoes are done, add the porkadobo with juices and cook it for another 30 minutes on simmer.
  • Serve withsteamed rice.

  • “I think step one is marinating step only & step 2&3 are the actual cooking steps. In step 3 you add the marinated pork less garlic & peppercorns, just the juice. Thats what I did and turned out to be a wonderful dish. I just added another half cup of water & simmer longer to make the meat more tender. Adjusted my salt and vinegar accordingly. Worth the try!”

  • “Tonkcats I love your recipes but there is a bit of confusion about this recipe.It didn’t say when to add the water so I thought that I should add it in the beginning with the pork & the garlic peppercorn etc as it was to cook for 30 minutes. This resulted in very pale looking pork.Then in step2 you say to cook the garlic – well it was already in the skillet in step one.I found that near the end ofthe cooking time that the resultwas quite bland so I added 1 tsp Carne Asada spice and 2 tbsps Szechuan sauce.results – excellent.As I said I love your recipes but this one was not to my taste buds!Thanks for all you other wonderful recipes that I have tried and loved Tonkcats”
