“Hubby and I are on the fence about this one.We think it’s good, but we can’t decide if we think it’s great…I agree with others who said it tastes a bit like a German potato salad.I cooked one of the large Costco potatoes in the microwave, then sliced and fried that with some onion powder, since I’m out of fresh.The liquid gets absorbed/ cooked out fairly quickly, so this is a quick, easy side dish.Thanks for sharing!”
“Excellent!My hubby loved these and so did I.Very reminiscent of German Potato Salad, which we happen to love.I used frozen green beans and steamed them in the microwave a bit before adding them to the potatoes and onions.I do NOT use canned vegetables of any sort – only fresh or frozen.I also substituted the sugar for Splenda.”

“I used red wine vinegar, as I had no cider vinegar.I loved it and so did one of my daughters.The others said it was a bit too tart, so when I make it again I might use a little less vingegar, but I am a huge vinegar fan, so it was great for me!I will make this again!!”
“This is an incredibly delicious and unique way to serve green beans and potatoes. The browning of the potatoes adds another layer of flavor and texture to this dish that is wonderful. I do think I might add a “touch” more sugar next time as it was a “hair” tangy. I this defintie comfort food and was delicious along side hot turkey sandwiches.”
“Awesome!This certainly isn’t the green beans and potatoes that both hubby and I grew up eating…boiled slimy starchy flavorless…YUCK! Precooking and then browning the potatoes makes a HUGE difference! Adding the green beans so near the end kept them from tearing to pieces too (I used a pint of home canned cut beans). I did lessen the cider vinegar by 1 Tablespoon and added an extra T water.Still a little tart for us, so I added a touch more sugar. There were no leftovers! Thanks for a great way to combine these two veggies!”
