Potatoes Sauteed With Shrimp

    Ingredients

  • 8smallred potatoes, large dice
  • 4tablespoonsolive oil, divided
  • 1lbsmall shrimp, cleaned
  • 2tablespoonsminced garlic
  • 2tablespoonslemon juice
  • 1teaspoonparsley
  • 1teaspoonsalt
  • 1/2 teaspoonred pepper flakes
  • Directions

  • Fry potatoes in 3 T olive oil until browned and tender.
  • Remove and keep warm.
  • Add remaining oil to skillet, add shrimp.
  • Cook for 2 minutes; add remaining ingredients and saute for 3 minutes.
  • Return potatoes and mix well.

  • “Very easy to prepare dish. I par cooked the potatoes in the microwave and fried them in half the oil. I sauteed the shrimp in a bit of butter instead of the oil. As with another reviewer, I added the zest of the lemon I was juicing. Lemons are expensive here and don’t want to let them go to waste just for the juice. Do not like heat, so left the peppers out.:)”

My 4 year olds LOVED it.I reduced the amount of Oil to 2 tablespoons.I cooked the potatoes first in 2 table spoons of Olive Oil in a Non Stick Pan and I used the remaining oil in the pan to cook the shrimp etc.I also microwaved the potatoes after the saute for 2 mins on high to be sure they were cooked through.this is a definite keeper.Thank you for posting”

I halved the salt as I hate something oversalted knowing you cant go back.Garlic was the crushed jar kind and used 1/2 Tablespoon and parsley was the dried type. Thankyou it was great.”
