Pumpkin and Orange Soup

  • Ingredients

  • 1smallonion, diced
  • 25gbutter
  • 1kgpumpkin, peeled and seeded
  • 5cupschicken stock
  • 1cuporange juice
  • 1orange, zest of
  • 1tablespoonsugar
  • salt & pepper
  • 1orange, thinly sliced
  • Directions

  • Saute onion gently in butter in a large saucepan until transparent.Add chunks of pumpkin, stock, juice, zest and sugar.
  • Simmer 20-25minutes until cooked.
  • Puree in a food processor or blender or pushthrough a sieve. Return to saucepan, add sliced orange and reheatgently for 10 minutes.
