    “A thick hearty soup. Delicious served with a fresh dinner roll.”

    Ingredients

  • 1cuponion, chopped
  • 4green onions, chopped
  • 1/4 cuphard margarine or 1/4 cuphard butter
  • 2teaspoonsall-purpose flour
  • 1/2 teaspoonsalt
  • 1/8 teaspoonpepper
  • 1/4 teaspoonground ginger
  • 1cupvegetable stock
  • 3cupsvegetable stock
  • 1 (14ounce) cans pumpkin, without spices
  • 1/2 cuplight cream
  • Directions

  • Saute onion and green onion in margarine in large saucepan.
  • Saute until soft.
  • Mix in flour, salt, pepper and ginger.
  • Add first amount of vegetable stock, stirring until boiling and thickened.
  • Process in blender to smooth.
  • Stir in second amount of vegetable stock, pumpkin and cream.
  • Heat through.

It is not a super pumpkin taste so for people who hate pumpkin it will surely please. For pumpkin lovers it has a great hint of it without over powering, great with fresh bread and salad.
