    “Fast, easy and can easily be doubled.Makes two large servings”

    Ingredients

  • 1 (8ounce) boxes bow tie pasta
  • 2clovesgarlic
  • 2teaspoonsolive oil
  • 1cupchopped fresh spinach
  • 1cupbroccoli floret
  • 1mediumred pepper, roasted( you can purchase roasted peppers in jars at your grocers)
  • 1cupgrilled chicken, sliced into 1/2 inch wide strips
  • 1cupprepared alfredo sauce
  • 1/8 cupbasil pesto
  • 1teaspoonitalian seasoning
  • 2teaspoonsshredded parmesan cheese
  • Directions

  • Cook pasta according to package directions.
  • In a large skillet saute the garlic in olive oil.
  • Add spinach and broccoli, red pepper and grilled chicken.
  • Toss to combine.
  • Stir in Alfredo sauce and pesto, simmer for 5 minutes.
  • Drain pasta and pour into a bowl.
  • Top with sauce and toss well.
  • Sprinkle with Italian seasoning and Parmesan cheese.

I think it would even taste good w/out the chicken for those that are vegetarian :-)The serving size is debatable, as I doubled the recipe thinking I needed enough for 4, when in fact this recipe NOT DOUBLED, would have been plenty for the four of us.After doubling, i have 3-4 extra servings easily. So, if you are not a big eater, i might suggest not doubling if you are serving 3-4 🙂 Just my observation and opinion. Wonderful recipe. I sauteed the chicken, took it out of the pan then followed the directions for the rest. I doubled it for my family of 6, as we also wanted leftovers.
