    “Great tasting cookie recipe that I’ve made since I was able to bake. Nice combination with the oatmeal, coconut, and Rice Krispies.”

    Ingredients

  • 1cupbrown sugar
  • 1cupgranulated sugar
  • 1cupbutter
  • 2largeeggs
  • 1teaspoonvanilla extract
  • 2cupsflour
  • 1/2 teaspoonbaking powder
  • 1teaspoonbaking soda
  • 1/2 teaspoonsalt
  • 2cupsoatmeal
  • 1cupcoconut
  • 2cupsRice Krispies
  • Directions

  • Preheat oven to 375°F.
  • In a small bowl, combine flour, baking powder, baking soda and salt; set aside.
  • In a large bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy.
  • Beat in eggs.
  • Gradually add flour mixture; mix well.
  • Stir in oatmeal, coconut, and Rice Krispie cereal; mix well.
  • Roll into small balls and flatten with hand.
  • Bake on ungreased cookie sheets for 10-12 minutes or till light brown.

  • “I have been on a quest to find the best ranger cookie, and while this doesn’t quite get there, it is the closest yet.I added some cinnamon and nutmeg for a bit of flavor, along with some choclate chips, but otherwise followed it as written.My major complaint is that the dough does not hold together well at all after the first dozen are formed.I do not like a dough that won’t hold together.I had to really work to get these to stay together enough to bake them off, but once I did, they tasted great.I am going to make these again, but tweek them a bit to try to get the dough to hold together better.If I get better results, I’ll change my review.”
