    “This is a recipe passed on to me by a friend. I love it on cold evenings, especially for the smokey flavour the sausages give the soup.”

    Ingredients

  • 1lbsmoked Polish sausage, cut into chunks
  • 5mediumpotatoes, peeled and cubed
  • 2mediumonions, chopped
  • 2carrots, chopped
  • 5cups chicken broth or 5cupsvegetable broth
  • 2cupssauerkraut
  • 1 (6ounce) cans tomato paste
  • Directions

  • In a large saucepan, add sausage, potatoes, onions, carrots and chicken broth.
  • Bring to a boil, reduce heat and simmer for around 30 minutes, until potatoes are cooked.
  • Add sauerkraut and tomato paste, mixing well.
  • Return to a boil, reduce heat, cover and simmer another 30 minutes.

  • “I have made this recipe for years.It is very good on a winter day with some homemade bread.Add some minced garlic and a teaspoon or two of black pepper.Also rinse the kraut before adding it cuts down on the sodium content. “

I used a lean smoked turkey sausage, which was unfortunately a little bland, so be sure to use a good strong spicy sausage to stand up to the rest of the soup.
