Sausage, Peppers, and Potatoes

    Ingredients

  • 1tablespoonolive oil
  • 1lbItalian sausage, cut into 2 inch slices
  • 1largegreen pepper, cut in strips
  • 1largered pepper, cut in strips
  • 5largepotatoes, peeled and diced large
  • 1 (1ounce) envelope onion soup mix
  • 1 1/2 cupswater
  • Directions

  • In 12 inch skillet, heat oil and brown sausage.
  • Remove from pan.
  • Add peppers, potatoes, onion mix and water.
  • Bring to a boil.
  • Reduce to low and simmer, covered 20 minutes.
  • Return sausage and simmer another 5 minutes, or until potatoes are done.

I simply sprayed my non-stick skillet with a little cooking spray and then browned the sausage slowly til it released a little of its own fat, then turned up the heat a little.i also left the sausage in the skillet while cooking the rest of the ingredients and was happy with the end result.”
