Schlotzsky’s Deli Bread

    “This is a clone of the bread for Schlotsky’s sandwich bread. It also makes wonderful toast. Schlotsky’s is a chain delicatessen. I’m not sure where all their locations are but they are popular in Texas. See the recipe for the muffalata filling that is outstanding on this sandwich.”

    Ingredients

  • 1/2 cuplukewarm water
  • 1tablespoonsugar
  • 1 (1/4 ounce) package yeast
  • 3/4 cuplukewarm milk
  • 1/2 teaspoonsalt
  • 1/4 teaspoonbaking soda
  • 2 1/2 cupsbread flour( all-purpose will work)
  • cornmeal
  • Directions

  • Stir water, sugar and yeast together and set aside.
  • Dissolve baking soda in 1/2 tablespoon warm water in medium bowl.
  • Add warm milk, salt and 1 cup flour; beat till smooth.
  • Beat in yeast mixture and remaining flour (batter will be thick and sticky, but not as thick as normal bread batter).
  • Spray two pie pans with cooking spray and dust with cornmeal.
  • Divide dough and place in pie pans, cover and let rise for 1 hour.
  • Preheat oven to 375ºF and bake for 20 minutes till golden.
  • Cool 1 hour and cut in fourths.

It’s been a very long time since I’ve eaten Schlotzky’s, so I won’t compare, but it was delicious. It was very soft and moist in the center, which isn’t necessarily a bad thing, just too soft for my liking. Next time I’ll probably bake it a few minutes longer.”

  • “This bread is wonderful! I thought maybe I misunderstood the directions as I had a moist little blob of dough on each of my 2 pans that did rise, but not that high. I used 2- 9 inch round cake pans. Talk about a pleasant surprise! The bread rose nicely while baking and were the softest little loaves I have ever made. DH and DS devoured them in minutes with dinner and asked me to make more tomorrow. This recipe is so easy that it is even possible to make on weeknights with dinner. I highly recommend this recipe.
