    Ingredients

  • 1lbsmoked sausage, cut into 1/2 inch slices
  • 1lbground beef
  • 1mediumgreen pepper, chopped
  • 1/2 cupchopped green onion
  • 5garlic cloves, minced
  • 1 (28ounce) cans tomatoes
  • 1/2 teaspoonsalt
  • 1/4 teaspoonpepper
  • 1cupuncooked rice
  • 1 1/2 cupswater
  • Directions

  • Cook sausage in Dutch oven until browned; remove from skillet and discard drippings.
  • Combine ground beef, green pepper, onion and garlic; cook until beef is browned.
  • Add tomatoes, salt, pepper, and sausage.
  • Cover; simmer 20 minutes.
  • Add rice and water to meat-vegetable mixture.
  • Cover and cook 25 minutes or until the rice is tender.

Because we love jambalya I doubled the recipe ingredients except I did not use the ground beef.Instead I substituted 1 pound of ham cubes, 1 pound of large shrimp, 1/2 pound cooked chicken. I sauted these in olive oil before I threw it in with the rest of the ingredientsAdded 1 Tablespoon of Cajun seasoning and 1/2 teaspoon cumin and 1/4 teaspoon cayenne. My family loved it.”

I also substituted chicken broth for the water.I used red bell pepper and halved the recipe which still seemed to be atleast 4-5 servings.And for some spiciness instead of salt and pepper I used a cajun seasoning and some Emeril’s Essence.
