    “These are delightfully soft and comforting cookies. They almost fall apart in your mouth!”

    Ingredients

  • 1cupwater
  • 2cupsraisins
  • 1cup shortening or 1cupbutter
  • 1 3/4 cupssugar
  • 2largeeggs, lightly beaten
  • 1teaspoonvanilla extract
  • 3 1/2 cupsflour
  • 1teaspoonbaking powder
  • 1teaspoonbaking soda
  • 1teaspoonsalt
  • 1/2 teaspoonground cinnamon
  • 1/2 teaspoonground nutmeg
  • 1/2 cupchopped walnuts(optional)
  • Directions

  • Combine raisins and water in a small saucepan; bring to a boil and cook for three minutes.
  • Remove from the heat and let cool but do not drain.
  • In a mixing bowl, cream shortening or butter with sugar.
  • Add eggs and vanilla.
  • Mix dry ingredients together and gradually add to creamed mixture.
  • Blend thoroughly.
  • Stir in nuts and raisins, along with the water the raisins were boiled inches.
  • Drop by spoonfuls onto greased baking sheets.
  • Bake at 350° for 12-14 minutes.

I was looking to get rid of some ancient raisins & craisins sitting in the fridge and they all turned out plump and juicy after boiling. I halved the recipe and used brown sugar instead. I also added only about half of the boiled water spoon by spoon while blending so to keep the mixture from becoming runny.
