Sorbet De Fraises Et De Framboises – Strawberry & Raspberry

    “A refreshing light dessert, serve with light cookies. Originally from “French Cooking – Eileen Reece”.”

    Ingredients

  • 1lbstrawberry
  • 1lbraspberries
  • 7ouncessugar
  • 1/2 pintwater( only if using fresh fruit, I use frozen berries, they don’t need extra water, just don’t drain them)
  • 1lemon, juice of
  • Directions

  • Hull the fruit, save a dozen whole berries for garnish.
  • Liquidize or mash them and pass them through a fine sieve to remove pips.
  • Beat in the sugar until dissolved, add water (if using) and strained lemon juice and pour into a freezing container.
  • Freeze for 40 minutes.
  • Remove and beat with a “silver” or “wooden” spoon and freeze again for 4 hours.
  • Serve in tall glasses.
  • Garnish with whole berries.

  • “I made mine with fresh berries from home, and used juice of two lemons (i.e. 6 tbsp “ReaLemon”).This recipe is all flavor! (Though it will depend on the quality of your berries!).The amount of sugar was nice, it was just enough to cut down on tartness but wasn’t overly sweet.I froze some of my mixture in popsicle containers.”

  • “I didn’t bother to strain out the pips either; I agree with hippieastrum about their texture. The sorbet came out of the freezer far too hard and made me wish I had an ice cream maker, food processor or at least a better blender, but after letting the sorbet thaw for a little while (or hitting it with a spoon when I got too impatient), it was just delicious. Next time I’ll try adding a few tablespoons of vodka to the mix, since that helped a lot with my most recent sorbet attempt… Or maybe I just won’t leave it in the freezer for so long. Anyway, this is a great recipe with wonderful flavors. I highly recommend it!”

  • “Refreshing & HeaLTHY! I used my vita mix which allowed me to skip the hulling, sieving, & freezing. I used frozen berries putting them into the vita mix with the juices and 1/2 the sugar. The berries were sweet and really didn`t need it. Blended on medium then high using the pusher. Came out very creamy and yummy!”

I used fresh from the patch strawberries andmaybe a tad bit of lemon juice but not much if at all. Mine wasn’t ready in 5 hours, I ended up leaving it overnight and enjoying the next day.”
