St. Patrick’s Day Parfaits

    “This is a fun dessert to serve for St. Patrick’s Day.”

    Ingredients

  • 1 (3 ounce) boxes Jell-O instant pistachio pudding mix( 4-serving)
  • 2cupsmilk
  • 2kiwi fruits, peeled and thinly sliced
  • Cool Whip
  • 3dropsgreen food coloring
  • green coarse sugar, for garnish( the kind used on xmas cookies)
  • Directions

  • Prepare pudding according to package directions using the milk; chill until set.
  • When pudding is chilled, layer pudding, kiwifruit and green-tinted Cool Whip in clear dessert glasses (wine glasses will work well)– do pudding-fruit-coolwhip then repeat, ending with a layer of Cool Whip.
  • Sprinkle a tiny amount of green coarse sugar on parfaits and refrigerate until serving.

Also, I layered chopped up pieces of homemade sugar cookies with the other ingredients, the first layer on the bottom of the glass being the cookie pieces, and so forth. The guests thought this was the highlight of the meal. It’s been years since I made instant pudding, especially pistachio pudding but we got a kick out the whimsical and colorful presentation.   • “This was very easy to make, the flavor is awesome (if you like pistachio and kiwi).First time I followed the recipe exactly, 2nd time I doubled the recipe for a really nice trifle & added a crunch to the layers… graham cracker crust (the same recipe you would use for a pie crust).This is becoming a weekly dessert at my house.   • “I didn’t have any green food coloring so I tried adding yellow and green (3 drops each) but it didn’t change the color hardly any and I was losing the consistency of the whipped topping, still tasted great though! Next year I’ll think in advance and make sure I have green food coloring and make ‘homemade’ whipped topping in my ‘Whip-it’ and that way while I shake it the food coloring will be blended.
