Strawberry Bread

    “A great quick bread, dissappears before you know it.”

    Ingredients

  • 1cupstrawberry, pureed( 2-10 oz pkgs frozen or 2 pints fresh)
  • 4eggs
  • 1cupvegetable oil
  • 3cupsflour
  • 1 1/2 cupssugar
  • 2teaspoonscinnamon
  • 1teaspoonbaking soda
  • Directions

  • In a large bowl, combine strawberry puree, eggs and oil.
  • Blend in sugar, cinnamon and baking soda.
  • Add flour.
  • Pour into 2 greased and floured 9×5″ loaf pans.
  • Bake 40-50 minutes at 350F.
  • Cool completely before removing from pans.
  • Serve with sweetened cream cheese.

  • “I’m sorry to say that I was dissapointed with this bread.I brought some into work & it was enjoyed… but NO ONE could identify the type of fruit used in the bread.The taste was mostly cinnamon, & the strawberry flavor was pretty much non-existant.I even usedmore pureed fruit than called for & cut back a bit on the oil. The bread was very moist, but a dissapointment because of the lack of strawberry flavor.”

  • “This makes a great breakfast or tea bread.I dressed it up for a party by making mini loaves, cutting them in slices and then I covered the slices with berry cream cheese and put a slice of fresh strawberry on it.I had lots so I also made an ice cream cake and layered the strawberry bread, leftover, sweetened strawberry puree and vanilla ice cream, then I garnished that with fresh strawberries and froze it.Very yummy!”
