Strawberry Streusel Muffins

    “This recipe makes a great breakfast muffin, and you could easily substitute blueberries for strawberries.”

    Ingredients

  • 1/3 cupsugar
  • 1/4 cupbutter, softened
  • 1egg
  • 2 1/3 cupsflour
  • 4teaspoonsbaking powder
  • 1/2 teaspoonsalt
  • 1cupmilk
  • 1teaspoonvanilla extract
  • 1 1/2 cups fresh strawberries or 1 1/2 cupsfrozen strawberries, chopped
  • FOR THE STREUSEL

  • 1/4 cupsugar
  • 1/8 cupflour
  • 1/2 teaspooncinnamon
  • 1/8 cupbutter
  • Directions

  • Cream butter and sugar together in a bowl.
  • Add egg, mix well.
  • In a separate bowl, combine flour, baking powder and salt.
  • Add to creamed mixture, together with milk.
  • Stir in vanilla, followed by strawberries.
  • Fill 12 paper-lined muffin cups with batter.
  • In a small bowl, mix together sugar, flour and cinnamon, then cut in butter until mixture is crumbly.
  • Sprinkle over muffins.
  • Bake at 375 F for 25-30 minutes or until browned.

  • “Not overly sweet, there is just enough sugar to cut down on tartness.Make sure you cut down strawberry pieces small (big pieces shrink and get gooey).Cinnamon crumbs on top give a nice flavorful edge.”

  • “These should be called individual Strawberry Coffee Cakes. It’s pretty good as that if you double the butter to 1/2 cup, change all of the sugar to brown sugar, add cinnamon to the batter, and reduce the baking powder to 3 tsp (or a tablespoon) if you are really looking for a muffin you would need to up the fat even more.Also the strawberries are really good but they threaten the structural integrity. I think this is why it calls for muffin liners.”
