The Best Tasting Grilled Pizza

    “This is by far the best tasting pizza I have ever had. The crust is so good. We used smoke flavored chips on the charcoal and it added to the great flavors. Enjoy!”

    Ingredients

  • 1 (1/4 ounce) envelope active dry yeast
  • 2/3 cupwater( 110-115 degrees)
  • 2 -3cupsflour
  • 1teaspoonkosher salt
  • 2teaspoonsfresh ground pepper
  • 2garlic cloves, minced
  • 2tablespoonsolive oil, plus extra for brushing and kneading
  • 1/2 teaspoonsugar, for the topping
  • cheese, any that you like
  • 1cup pizza sauce (or any sauce that you like, it’s up to you!) or 1cup alfredo sauce (or any sauce that you like, it’s up to you!) or 1cupgarlic, sauce( or any sauce that you like, it’s up to you!)
  • Directions

  • For the dough: in a medium bowl, combine the yeast sugar and water.
  • Whisk until all the yeast is melted.
  • Let stand for 5-10 minutes.
  • Add two cups of the flour, salt,pepper, garlic and olive oil.
  • Stir with your hands until the dough holds together.
  • Transfer the dough to a lightly oiled surface(use oil not flour as it lends a crunchier crust). Knead until the dough is smooth about 8-10 minutes.
  • Shape into a ball and let stand in an oiled bowl covered in a warm place for about an hour or until the dough doubles in size.
  • Punch down the dough and transfer again to a lightly oiled surface.
  • Divide the dough into to equal pieces.
  • Stretch the dough with your hands until the dough is about 1/8 inch thick.
  • Slide the dough to a lightly oiled baking sheet.
  • Slide the dough onto the grill and cook uncovered directly over a medium heat until the grill marks are clearly visible.
  • Brush the dough with olive oil.
  • The crust may bubble but that is ok as it will deflate as you turn it.
  • Turn the dough and brush again with olive oil.
  • Top first with your cheese choice as the cheese will melt evenly being put on first.
  • Next add you sauce and then toppings.
  • Grill for about 5 minutes more or until cheese is melted.
  • It is best after you add the toppings to close the grill and view every three minutes until the cheese is melted.
  • I did not specify a quantity for the cheese as everyone likes different amounts of cheese.
  • Let the pizza rest a few minutes before cutting it.
  • I added minced garlic to my olive oil for brushing.

  • “This one was a fun adventure. Our grill at the lake is lousy, so one half of the dough cooked and the other half was mushy. Flipping it was hillarious and caused everyone to gather around the grill and watch and laugh. We decided to call them “free form art pizzas”. Lesson learned, trying to make two at once is ot a good idea.I cheated and used canned pizza sauce. I topped one the traditional way, sauce first, and then cheese and pepperonis. The other one I topped with olive oil, garlic, spinach and smoked mozzarella.I turned the grill off then and closed the lid until the cheese melted. It didn’t take too long and then the dough didn’t burn. We did have some trouble with the edges of the dough slipping through the grill and charring, but I think that was more because we have a lousy grill!   • “This was my first time preparing pizza on a grill and it was fun! I had visions of the dough just slipping through the grate onto the charcoal but it worked perfectly. I made two small pizzas so they would be easier to turn. I used my pizza peel to flip them with no problems at all. On one pizza I put the cheese on first and the other I did it the traditional way. We really preferred the traditional way because the cheese-first version was messy to eat because of the sauce getting all over. Since the bottoms of the crust were starting to burn in only about 4 minutes, the toppings were barely warm and had to I put them under the broiler to finish browning them. Thanks for a fun twist to an old favorite!”
