    “These are a bit time-consuming, but SOOOO worth it! Perfect with grilled chicken or steak!”

    Ingredients

  • 8mediumrusset potatoes( about 5 lb.)
  • 2teaspoonsoil
  • 3/4 cupgrated cheddar cheese
  • 1/3 cupsour cream
  • 1/4 cup margarine or 1/4 cupbutter
  • 1scallion, minced( I usually use about 1/4 c. regular onion)
  • 1/2 teaspoonsalt
  • 1/4 teaspoonblack pepper
  • 1dash garlic powder or 1clovegarlic, minced
  • Directions

  • Preheat oven to 425 degrees.
  • Pierce potatoes with fork and rub with oil.
  • Place on baking sheet, and bake until tender, about 45 minutes.
  • Reduce heat to 350 degrees.
  • Remove potatoes from oven.
  • When cool enough to handle, horizontally cut the top skin off of each potato.
  • Scoop out flesh, leaving 1/4 inch shell.
  • Mash scooped out potato, then stir in cheddar cheese, sour cream, margarine, onion, and seasonings.
  • Stuff potato skins with mixture (don’t be afraid to pile it in!).
  • Sprinkle with paprika.
  • Bake until hot, about 25 minutes.

  • “My family really enjoyed these.I didn’t have russet potatoes but had Idaho on hand.I had to add milk to the mixture.I did not feel the sour creme was too much but instead felt the blend of ingredients was balanced.I baked the skins alone for about 10 minutes to crispen. I quickly found that while my scooping method did not leave the best looking skin (one even tore in half) that once the filling was scooped back in, it really did not matter.Very forgiving. Reheated very well the next day.”
