    “Served in the dining room of the U.S. Senate.”

    Ingredients

  • 1lbdried great northern bean
  • 1meaty ham bone
  • 3mediumonions, chopped
  • 3clovesgarlic, minced
  • 3celery ribs, chopped
  • 1cupinstant potato flakes
  • 1/4 cupfresh parsley, chopped
  • salt and pepper
  • Directions

  • Put beans and enough water to cover in pot.
  • Bring to a boil, and boil for 2 minutes.
  • Remove from the heat and soak for 1 hour.
  • Drain and rinse beans.
  • In large pot, put beans, ham bone, and 3 quarts water.
  • Bring to a boil.
  • Reduce heat,cover and simmer for 2 hours.
  • Add next 5 ingredients.
  • Add salt and pepper to taste.
  • Simmer for 1 hour.
  • Remove hambone.
  • Remove meat from bone and cut in small pieces.
  • Return to pot.
  • Heat through.

I soaked the beans for an hour but I didnt drain or rinse, I cleaned and rinsed the beans prior to boiling, I then added one large can of chicken stock, a small palm full of red pepper flakes, we love spicy food and forgot the parsley. Tis soup was thick and very tasty, I can’t wait to try it today after the flavors had a chance to blend overnight. Served with french bread.”
