Vanilla Chai Glazed Donut Recipe

Looking for the perfect way to kick off your Sunday? Whip up a batch of these warm and spicy donuts. Bonus: they’ll make your house smell like fall.

Autumn is the time when I get serious about getting back in the kitchen. I research spices, new baking techniques and, ultimately, try to conjure recipe magic for friends and family.

These vanilla chai glazed donuts are baked, not fried, which makes them delicious but enjoyable without the guilt that many associate with this sweet treat. Healthfulness aside, they are extremely easy to make and leave your entire home smelling warm and bright for the rest of the day.

Ingredients:

Donuts:

1/4 cup deeply steeped chai tea, cooled, 2 tbsp reserved for glaze

1/2 tsp cinnamon

1/2 tsp ginger

1/2 tsp nutmeg

1/4 tsp coriander

2 tbsp vanilla extract

1 cup flour

1/2 cup brown sugar

1 tsp baking powder

1/4 tsp salt

1 egg

2 tbsp coconut oil – heated to liquid

Glaze:

1 cup confectioners sugar

2 tbsp reserved chai tea

cinnamon + brown sugar (optional)

Tools: donut tin, coconut oil cooking spray, stand or hand-held mixer

Preheat oven to 375 degrees. Spray donut tin with coconut oil spray.

In a medium bowl, add spices in small sections to keep track. Whisk well and ensure all are thoroughly blended. Set aside.

Using a stand or hand-held mixer, add cooled tea, coconut oil, vanilla extract and egg and mix on low.

While mixer is on, slowly and gradually add remaining donut ingredients. Once combined, stop and scrape the bowl before briefly mixing again to fully combine.

Use measuring cup or vessel with pouring spigot to distribute batter into donut wells – fill 2/3 full.

Place donuts in pre-heated oven for 10 to 20 minutes. Pull a toothpick clean from a donut to confirm it is fully baked.

Set onto cooling racks.

The Glaze

Mix together confectioners sugar and one to 2 tablespoons of remaining cooled chai tea. Add enough so glaze is thick but fluid.

Drizzle glaze over donuts once they are sufficiently cooled while on racks. Add a sheet of parchment paper underneath rack to protect the counter. Sprinkle cinnamon and brown sugar on top.
