    “Easy to make and a great way to use up those brown bananas”

    Ingredients

  • 2slightly soft bananas
  • 1 1/2 cupsall-purpose flour
  • 1teaspoonbaking powder
  • 1 3/4 cupssoymilk
  • 1/2 cupbrown sugar
  • 1/2 teaspoonsalt
  • 1teaspoonvanilla
  • 2tablespoonsoil
  • Directions

  • combine all ingredients in a blender and blend till smooth.
  • Pour onto oiled skillet at medium heat.
  • Bubbles will form and pop.
  • brown both sides and serve.
  • You may have to thin batter with water to get it to spread easily.

I made some changes that other people might like:2VERY ripe bananas3/4 cup all-purpose flour3/4 cup whole wheat flour1 teaspoon baking powder1cup rice milk or almond milk1/2 teaspoon salt (I used a big pinch)1 teaspoon vanilla1/4 cup dried fruit (I used cranberries)So, no added sugar, no added oil, but did add some fiber and some natural sweetness. Let it sit for a little bit to hydrate the whole wheat. Add water if it becomes too thick, add baking powder if it won’t puff.If eaten hot, you won’t miss the oil too much!”

  • “These are pretty good.One caveat though, they are VERY sweet.(Probably because of the 2 bananas and the 1/2 cup of brown sugar!)Mine were not completely vegan because I ran out of soy milk and subbed skim milk until I ran out of that and then I subbed dry milk, reconstituted.Still turned out fine.These are very thin pancakes which I expected as all the blender pancakes I have made are.The best thing about these is that, because they are so sweet, you don’t need to put anything on them.They would be great to take and eat warm as you are leaving the house.”
