Vegetarian Lentil Stew

  • Ingredients

  • 2teaspoonsvegetable oil
  • 1cupchopped onion( , about 2 medium)
  • 1clovegarlic, finely chopped
  • 3cupswater
  • 2cupscoarsely chopped potatoes( , about 2 medium)
  • 1cupdried lentils, sorted and rinsed
  • 1/4 cupchopped fresh parsley
  • 1/2 teaspoonground cumin
  • 1/2 teaspoonsalt
  • 1/4 teaspoonpepper
  • 1/4 teaspoonground mace
  • 8ouncesfresh mushrooms, cut in half
  • 1 (28ounce) cans whole tomatoes, undrained
  • Directions

  • Heat oil in Dutch oven over medium-high heat.
  • Saute onions and garlic in oil.
  • Stir in remaining ingredients; break up tomatoes.
  • Heat to boiling; reduce heat.
  • Cover and simmer about 40 minutes, stirring occasionally, until potatoes are tender.

Next time I will probably add the potatoes a bit later as they were a little mushy by the time the lentils were tender. Additional seasoning would also add a stronger dimension. Thanks.”

  • “i also added chili pwd and carrots and corn and spinich ( i wanted it really vegetably) it was very good but lacked a little flavor i added more of the spices and it definatley needed more tomatoes so i mixed some salsa into my portion wich was then delicious. i served it with vegan stove-top cornbread recipe #189099 and the two complimented each other perfectly both better together than seperate. it was a hit though and i did serve it the next day as others have recommended. thanks for a great recipe”
