  • “I probably shouldn’t even rate this as I made some changes.I doubled the dried herbs and garlic, and that was a good thing.I could have easily put even more in and not hurt the soup.I used fresh tomatos, and that was a mistake, because I don’t think I had enough.I sprinkled a little dried tomato dust to help make up for it, as well as extra water, but I think next time I’ll use the canned ones.I also used cheese tortellini instead of pasta and cheese. That was excellent. The recipe as it stands would be a very bland soup indeed. However, the overall mix of ingredients is very good.I say, try this one, but use it as a guideline and adjust according to your personal taste before serving.”

  • “A great recipe to start with when you have stuff to get rid of!I added a can of green beans, some Italian Seasoning, and about half a can of garbanzo beans I had in the fridge.I also used vegetable broth instead of water.Really good, thanks Sueie!”

  • “rarely is something as light and nutritious as tasty as this. i thought this recipe was very flexible so i just adapted it to include whatever veggies i had on hand, so i threw in some peas and corn too. i used fresh basil and i little extra seasoning. i also used some knorr veg stockinstead of just water. dusted with parmesan, this was a delightful little supper with a crusty homemade bread.”

  • “I included everything in this recipe, and also added a full can of corn and a full can of garbanzo beans (both drained.) Since I’d added so much extra volume with the beans and corn, I added some more water and increased the amount of the herbs to help compensate. I also added a tiny bit of salt. The prep-work for this soup took about seven minutes. As an interesting side note, the total cost of this pot of soup was $3.10. It made the volume eqivalent of seven cans of ready to eat soup, for which I have been paying $2.00 per can. So a savings of $10.90 on seven cans worth of soup and my vegan husband LOVED it.”

  • “This was an easy and yummy recipe. Like some of the others, I added veggie broth instead of water . Since I didn’t have any zucchini on hand, I added a couple frozen vegetables as a substitute. I’ll definitely try it again with some new twists.”

  • “This was really good and thick. I added some tahini at the end too. Yum.”

  • “This was very easy to throw together and was tasty. The only change I made was to use a bit of vegetable stock in place of some of the water.Made for Healthy Tag.”

  • “My family and friends all agreed this was delicious!Thank you Sueie!”

  • “This was amazing. That’s all I have to say for it.”

  • “We liked this alot. When I lifted the lid, my husband looked in, and said, “Wow, this looks, um, healthy.”But we licked the platter clean, so to speak.”

  • “Yum.I’ve never made minetrone before, but I will make this again.I actually just threw in a full can of kidney beans, and used a large can of tomatoes, and the result was wonderful.Very easy recipe, and tasted just like a second bowl. Thanks for posting.”

  • “Very Very yummy!!!The family loved it!Like a previous reviewer, found that there wasn’t quite enough water, so I added a 14.5 oz can of chicken broth along with the rest of the water…Just enough to cover, and added an extra bit of flavor. Will make again.”

  • “What a wonderful recipe for minestrone! My husband thought that it needed a little bit of salt, but that is up to taste preference. The only thing I would have done differently, would be to add about a half a cup to a cup more water. Other then that it was excellent and very easy!”

  • “tasty soup.Thanks.I’m a vegetarian and enjoyed this”

  • “We loved this!I didn’t make it vegetarian though.I added one pound of ground beef to start with.I also omitted the zucchini. It was delicious with canned green beans and 3/4 cup uncooked whole wheat macaroni.I added a bit more water. The cheese made just the perfect topping.I served it with bread from the Great Harvest store.Yum!”

  • “This is an excellent, light, and fresh tasting soup.It is very flexible in terms of ingredients that can be added or eliminated. For example, we had no kidney beans, so we used small white beans, and they worked very well.”

  • “This recipe is DELICIOUS!!!! It is very tasty and filling! Tastes just like when grandma made it…only a LOT easier!!!”
