Vegetarian Shepherd’s Pie

  • Ingredients

  • 1teaspoonparsley
  • 4ouncesadzuki beans, soaked
  • 2ouncesbrown rice, soaked
  • to tastewater, for boiling
  • 1tablespoonvegetable oil
  • 1mediumonion, chopped
  • 8ouncescarrots, thinly sliced
  • 1tablespoonsoy sauce
  • 2tablespoonstomato paste
  • 1teaspoongarlic powder
  • 1/2 teaspoonoregano
  • 1teaspoonbasil
  • 1/2 teaspoonmarjoram
  • 275mlbean stock
  • salt & pepper
  • 1lbpotato, Mashed
  • Directions

  • Wash the beans and rice in plenty of cold water. Combine about 4 cupsof water with beans and rice and cook for 5o minutes or until the beansare soft. Drain, reserving the stock for later.
  • Heat oil in a skillet. Fry the onions for 3 minutes.
  • Add thecarrots and cook covered for 5 minutes.
  • Add the cooked beans and rice.Stir well and let saute for a few minutes, ensuring that the mixturedoes not burn.
  • Combine the soy sauce, tomato paste, herbs and stock.
  • Mix well and pour into the skillet. Bring to a boil, reduce heat tovery low, partially cover and simmer gently for 30 minutes, stirringfrequently to prevent it burning. Add more stock if necessary.
  • Transfer into a casserole.Top the cooked vegetables with mashed potatoes.
  • Bake in a preheatedoven at 350F for 40 minutes, or until the potatoes are browned.
  • Serve with vegetables or a green salad.

  • “I soaked the beans for approx 12 hours changing water occasionally (means less gas!)I omitted the rice but added a tin of chunky chopped tomatoes, didn’t have any tomato paste so used tomato sauce to personal taste and two tablespoons of balsamic red wine vinigar. Wow, my husband who is a trad’ chips/bacon/sausage man who rarely tries and likes anything new liked it better than ordinary sheperd’s pie. Also brilliant with rice instead of potatoes.
