    “Yummy easy chicken with a BBQ and pineapple sauce.”

    Ingredients

  • 4boneless skinless chicken breast halves
  • flour, to coat
  • salt and pepper
  • 1teaspoonoil
  • 1cupcrushed pineapple, undrained
  • 1cupbarbecue sauce
  • 1tablespooncornstarch
  • 1/2 teaspoonginger
  • Directions

  • Coat chicken with mixture of flour, salt and pepper.
  • Brown in pan, drain.
  • Combine remaining ingredients and pour over chicken in pan.
  • Cover,simmer for one hour.
  • Serve with rice and steamed vegetables.

Rather than add ginger, I instead used some cayenne pepper, which gave the dish a bit of a subtle punch. Tasty, fast, and easy — a perfect quick dinner!”

I did only cook this for 35 minutes and the chicken was cooked through and very tender. Even at 35 minutes the sauce was trying to burn a little bit in the bottom of the pan.
