World’s Best Potato Salad

    “This is a zesty potato salad that you enjoy at the meal, and you find yourself picking at it in between meals.”

    Ingredients

  • 4lbswhite potatoes, diced
  • 1cupcelery, diced
  • 1cupdill pickles, diced( real dills)
  • 1cuppepperoni, diced
  • 1 (6ounce) cans pitted black olives, drained and diced
  • 1cupmedium cheddar, diced
  • 1cupswiss cheese, diced
  • 1/2 cupparmesan cheese, grated
  • 1cupwhite onion, diced
  • 1cupred onion, diced
  • 1tablespoongarlic salt
  • 1tablespoonminced garlic
  • 1/4 teaspoonwhite pepper
  • 1/2 teaspoonground black pepper
  • 1/2 teaspoondry mustard
  • 1/2 teaspooncelery salt
  • 1/2 teaspooncayenne pepper
  • 1cupmayonnaise
  • Directions

  • Peel and wash potatoes; cook in boiling water until just fork tender (do not over cook).
  • Cool and dice approximately 1/2 x 1/2-inch; combine with all other diced items (onions, pickles, pepperoni, cheeses, celery and black olives).Fold all of these ingredients gently with 1/2 cup of mayonnaise until mixed.
  • Refrigerate for at least a couple of hours, overnight is even better (this is important).
  • Add all spices and the rest of mayonnaise and minced garlic; gently fold until mixed.Refrigerate 30 minutes to 1 hour before serving.

As for the fat content- it has been admitted before that the panels are not always correct and you can always substitute low fat alternatives for cheese and mayonnaise.   • “Hey … I’m totally comfortable agreeing that this is the “world’s best.” Yum! I really liked all the add-ins, and the hint of spice. Even guests who usually refuse to eat anything spicy raved about it. I even ate the leftovers for lunch a couple of days .. it just kept getting better & better. I did use 1 1/2 c. cheddar cheese & 1/2 c. monterey jack instead of the cheeses listed. I also think I might try it as a cauliflower salad sometime – I think it would be great!”
