Zesty Chicken Stir-Fry

  • Ingredients

  • 1lbskinless chicken breast( or thighs)
  • 2tablespoonscooking oil
  • 1clovegarlic, sliced
  • 1/2 teaspoon ground ginger or 1tablespoonfresh ginger
  • 3 1/2 cupsassorted fresh vegetables
  • Sauce:

  • 1/4 cup lemonade concentrate or 1/4 cuporange juice concentrate
  • 1/4 cupsoya sauce
  • 1/4 cupwater
  • 2teaspoonssugar
  • 1tablespoonvinegar
  • 1tablespooncornstarch
  • Directions

  • Cut chicken in desired sized strips or cubes.
  • Slice vegetables.
  • Prepare sauce. Heat oil in a large skillet or wok.
  • Stirfry chicken, sliced garlic, and ginger over medium/high heat until chicken is cooked.
  • Add vegetables and stirfry until vegetables are tender-crisp.
  • Add sauce ingredients, mixing well.
  • Cook and stir until sauce thickens.
  • Serve garnish with grated lemon or sesame seeds.

  • “Not bad for a basic recipe. But it certainly could have used a bit more zesty-ness for being called a zesty stir-fry. I made it with onions, carrots, green beans, and a bit of broccoli. It was quite tasty. I ended up adding three more garlic cloves and using rice vinegar for the sauce. I think next time Ill add a bit more spice, and maybe use brown sugar instead of white in the sauce.”

I used broccoli and onions for vegetables because I didnt have the carrots and mushrooms I would have liked to have added. I added probably a tbsp fresh ginger and I served this on whole wheat noodles garnished with the sesame seeds, yummy chinese noodles! I will be making this again, thanks!”

    The only thing I changed was that since I didn’t have the fresh ginger I added half lemon’s juice instead of the concentrate and added sesame seeds at the end.
    I marinaded the chicken with the sauce ingredients and cooked first the chicken and then the veggies with the sauce. I used fresh red pepper, scallops, a carrot, mushrooms and frozen broccoli! Served it on white rice. Delicious!!!”
