Zucchini Coconut Bread

    Ingredients

  • 3cupsall-purpose flour
  • 2cupswhite sugar
  • 1teaspoonbaking powder
  • 1teaspoonbaking soda
  • 1teaspoonsalt
  • 2teaspoonsvanilla
  • 1teaspooncinnamon
  • 1cupvegetable oil
  • 3eggs, beaten
  • 1cup shredded coconut or 1cupshredded flaked coconut
  • 2cupsraw unpeeled grated zucchini
  • 1/2 cupwalnuts(optional)
  • Directions

  • Preheat oven to 325 degree F.
  • Grease 2 loaf pans.
  • Combine all ingredients in mixing bowl.
  • Mixture will be very thick.
  • Pour equal amounts of batter into 2 loaf pans.
  • Bake 1 hour and 15 minutes or until done.
