  • Ingredients

  • 2cupsflour
  • 1/4 cupsugar
  • 2 1/2 teaspoonsbaking powder
  • 1/2 teaspoonbaking soda
  • 1/2 cupmilk
  • 1/4 cupvegetable oil
  • 1egg
  • 1 1/2 cupschunky applesauce
  • 1/2 cupchopped apple
  • 1cupchopped pecans
  • Directions

  • Mix all dry ingredients set aside.
  • Mix all wet ingredients.
  • Add dry ingredients to wet.
  • Fill muffin cups 3/4 full.
  • Sprinkle a little sugar and cinnamon on each muffin before baking.
  • Bake at 400 deg.
  • for 20-25 minutes .
  • Cool 5 minutes and remove from pans.

    – Skin, core,and dice about three apples (I always use the sweeter kinds – gala, red delicious, pink lady, etc.)
    – Put into a pot and add water to just above the apples
    – Once tender, mash the apples Now you have perfect unsweetened apple sauce.Makes the recipe perfect.”

They were moist, but not sweet at all.With only 1/4 cup of sugar and no butter the taste was just not there for me.My friend had to put a tablespoon of butter on it to eat it.If you are looking for a healthy non-sweet muffin, these are for you.”

  • “These are really moist and tasty. I substituted 1/2 cup of walnuts and 1/2 cup of chopped mixed nuts as I was out of pecans. The only thing that was a little disappointing was that they kind of collapsed straight after I took them out of the oven, which made them look more like cupcakes than muffins. I had slightly better results though when I filled the muffin tins completely rather than 3/4 as stated. Thanks for sharing!”
