    “A friend brought me these a few years ago and they have become a family favorite. They are not only great for breakfast, but for dessert also. They also freeze well.”

    Ingredients

  • 1cuppumpkin
  • 1 1/2 cupssugar
  • 2eggs
  • 1/4 cupoil
  • 2 1/2 cupsflour
  • 1teaspoonbaking soda
  • 1/2 teaspoonsalt
  • 1tablespoonpumpkin pie spice
  • 2cupschopped apples
  • 1cupchocolate chips
  • Directions

  • Mix together pumpkin, sugar, eggs and oil.
  • Add flour, soda, salt and pumpkin pie spice.
  • Mix until blended.
  • Add apples and chocolate chips.
  • Spoon into muffin tins.
  • Bake at 350 degrees for 15-20 minutes.

  • “I’ve always been a fan for anything pumpkin, and so naturally this recipe was very enticing (and I had some apples I needed to use up :)). However, I’m also one who tries to eat as healthy as I can so I made a few adjustments to the recipe. First, I exchanged the 1/4 C of oil for 1/2 C of applesauce, and secondly I used wheat flour instead of white and reduced the flour to about 2 1/4 C.I also thought 1 1/2 C of sugar was a bit much and only put in 3/4 C. (Don’t worry they are still plenty sweet!). I loved them! And so did my husband! I’m definitely going to be making these again in the future! So for all of you that would enjoy a lowfat muffin, give it a try. It’s also so convenient to freeze them and just pop a bag of them in the microwave for a fresh muffin! “
