  • 1 1/2 tablespoonsolive oil
  • 1mediumonion, sliced
  • 1/2 teaspoongarlic, minced
  • 1/2 cupparsley, chopped
  • 1/4 cuppimiento, drained and chopped
  • salt and pepper
  • 6mediumpotatoes, sliced 1/4-inch thick
  • 1cupchicken broth
  • Directions

  • Heat the oil in a heavy skillet (that has a lid).
  • Add the onion and garlic.
  • Cook until soft.
  • Add the remaining ingredients and stir.
  • Cover and simmer for 20 minutes or until the potatoes are soft.
