    “I loved my grandmother’s blackberry cobbler. Unfortunately, I never had the opportunity to get her recipe. This is a recipe I got from Southern Living Magazine and modified to my taste. It is wonderful!”

    Ingredients

  • 1cupsugar
  • 1/2 cupall-purpose flour
  • 1/2 cupmelted butter
  • 2teaspoonsvanilla extract
  • 1/2 packagerefrigerated pie crust
  • 3 1/2 cupsfrozen unthawed blackberries
  • 1tablespoonsugar
  • 1egg white
  • 2tablespoonswater
  • Directions

  • Stir together the sugar, flour, butter and vanilla.
  • Gently stir in blackberries.
  • Spoon blackberry mixture into a lightly greased 11 x 7 baking dish.
  • Cut the piecrust into strips and arrange on top of blackberry mixture.
  • Mix together the egg white and water.
  • Brush the pie crust strips with this egg wash.
  • Sprinkle with sugar.
  • Bake at 425 for 45 minutes, or until crust is golden brown and blackberries are bubbly.

Wonderful… except then I had to come through by turning those berries into a cobbler worthy of them. No pressure, right? Well, this cobbler did the trick and was easy enough for even me! These berries are sweet, not very tart at all, so I cut the sugar to 3/4 cup and could easily have gone down to 1/2 cup. Baked for 25 minutes in an 8″ square Pyrex dish.
