Broccoli & Garlic Pasta for One

    “Nice simple dinner add a chicken breast on the side and a salad.”

    Ingredients

  • 1tablespoononion, chopped
  • 2garlic cloves, minced
  • 1teaspoon lite olive oil or 1teaspoonvirgin olive oil
  • 2tablespoonswhite wine
  • 1/4 cup chicken broth, defatted or 1/4 cupvegetable broth
  • 1cupbroccoli floret
  • 2cupscooked pasta
  • salt and pepper
  • 2tablespoons parmesan cheese or 2tablespoonsromano cheese, grated
  • Directions

  • Saute the onions and garlic in the olive oil until soft.
  • Add wine, broth& broccoli.
  • cover and cook for 3 minutes.
  • Toss pasta with broccoli and cook until both are heated through.
  • Season to taste, put on a dinner plate and sprinkle with cheese.

For the broth I used low-sodium chicken bouillon and for the cheese I used shredded romano. It was really good and is going straight into my “Stand-bys” cookbook as a regular go-to recipe.”
